  • Author: masterchef
  • Total Time: 25 minutes

Ingredients

– 1 pound shrimp, peeled and deveined
– 1 cup sushi rice
– 1 ¼ cups water
– 2 tablespoons rice vinegar
– 1 tablespoon sugar
– 1 teaspoon salt
– 1 ripe avocado, sliced
– 1 small cucumber, julienned
– 1 small carrot, julienned
– 2 green onions, chopped
– 2 tablespoons mayonnaise
– 1 tablespoon sriracha sauce (or to taste)
– Sesame seeds, for garnish
– Soy sauce, for serving
– Optional: nori sheets, cut into strips (for added texture)

Instructions

Preparing Spicy Shrimp Sushi Stacks is straightforward if you follow these simple steps:

1. Cook the Sushi Rice:
– Rinse the sushi rice under cold water until the water runs clear.
– In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and let it simmer for 20 minutes or until the water is absorbed.

2. Prepare the Sushi Vinegar:
– In a small bowl, mix rice vinegar, sugar, and salt until the sugar dissolves.
– Once the rice is cooked, remove it from heat and let it stand for 10 minutes.
– Fluff the rice with a fork and drizzle the vinegar mixture over the rice. Stir gently to combine. Allow to cool.

3. Cook the Shrimp:
– In a skillet over medium heat, add the peeled and deveined shrimp.
– Cook for about 3-4 minutes on each side or until they are pink and opaque.

4. Make the Spicy Mayo:
– In a small bowl, combine mayonnaise and sriracha sauce. Stir until well mixed. Adjust the heat to your preference.

5. Assemble the Stacks:
– Using a ring mold or a small bowl, layer the ingredients to build the sushi stacks. Start with a layer of sushi rice, followed by a layer of sliced avocado, then shrimp, and top with cucumber and carrot julienne. Drizzle some spicy mayo on top.
– Gently press down to hold the layers in place. Carefully remove the mold.

6. Garnish:
– Sprinkle sesame seeds and chopped green onions on top of each stack for added flavor and texture.

7. Repeat:
– Continue assembling the remaining stacks until all ingredients are used.
